Definition: Appley

This word refers to a particular smell or aroma which is often present in white wines, especially in the Chardonnay-based ones.  "Green apple" is a typical taste which is possible to find in some white Burgundies and in almost all the Champagne made with 100% Chardonnay (Blanc de Blanc).A smell/taste of "Fresh apples" is often found in German Riesling, Austrian Gruner Veltiner and few more wines. ""Ripe apples" represent a  rich, fruity, smell while "Stale apples" is almost always used to describe barely oxidized whites.The idea is: the riper the apple the richer the smell/taste. If the apple smell is "unripe" we are talking of a lean and crisp sensation.
