Definition: Extracted

This term refers to the colour given to wines during the fermentation process by the skins of the grapes used. A longer contact period between the grapes juice and the skin gives a deeper colour to the wine together with more flavours. Extracted means that the maceration process has been long and the resulting wine has a very intense colour. In Rose' wines the skins are in contact with the juice for a shorter period: this is the reason of a pinkish colour. Some Champagne have on the label "Blanc de Noir" which means that also if the Champagne is white, has been made with red grapes. In fact the juice of grapes is always clear and the colour is given by the skin.
