Grapefruit belongs to the citrus family and is also the largest of them. Grapefruit originated in Malaysia but nowdays is widely cultivated in Florida and Israel. The taste of grapefruit has a peculiar tartness. Its aroma is generated by the molecule nootkatone which is contained both in the skin and in the juice.

Moreover, the scent of grapefruit always contains a small trace of Sulphur. It is easy to recognize it just by scratching the skin. It derives from para-mentene-1-thiol-8.

The grapefruit aroma is commonly found in Sauvignon Blanc. More often is typical of New Zealand Sauvignon Blancs, but is quite common also in Sancerre, Pouilly-Fumé, California and dessert wines from Bordeaux. Sometimes this nuance is detected also in other grape varieties, especially Riesling.
