Canapés au saumon fumé

Posted on 20050709

Ingredients

1 pound fresh cream cheese
2 oz. smoked salmon, julienne cut slices
1/4 lemon, chopped into fine dice
1/4 cup extra-virgin olive oil
freshly ground black pepper
White bread cut in small triangles

On oven toasted bread spread the cream cheese.Top with smoked salmon and lemon. Drizzle with olive oil. Top with fresh pepper.

Wine Recommendation: Champagne is the best pick. A Rosé would grant an adequate level of complexity and fruityness to balance the oilyness and strong taste of smoked salmon. A good choice would be Moet et Chandon Brut Rosé. An excellent choice Pol Roger Rosé 1996 Vintage.
