POLENTA

Ingredients


2 cup of polenta flour
salt
extra virgin olive oil

 

Preparation


In a large pot heat 8 cups of water and add a pinch of salt. When the water is quite warm start to pour very slowly the polenta flour into the water and stir continually. Repeat until the flour is completely mixed with the water. Add 1/4 cup of olive oil.Bring to boil and reduce heat. As the polenta becomes more thick is very important to stir vigourosly to avoid that the mixture burns at the bottom of the pot. Cook over low heat for 35-40 minutes and add some water if needed. Serve polenta preferrably over a wood board and spread it. Polenta should be 1/3 inch thick. Top with your favorite sauce. Another way to serve polenta is to give it a bread shape and to slice it when is cold.
